Steamed Cabbage Rolls with Minced Pork and Kitchi Sauce

This dish is simple to prepare, easy to enjoy, and light on the stomach. Kitchi Sauce is the only seasoning you need for both the pork filling and the sauce—making preparation more convenient while helping reduce sodium. Let’s start rolling!

Ingredients

Ingredients for the Cabbage Rolls
  • 8–10 large napa cabbage leaves

  • 400 g minced pork

  • 3–4 tbsp Kitchi Sauce, or adjust according to your sodium goals

  • ¼ cup finely diced carrots

  • 3–4 dried shiitake mushrooms, soaked until soft and finely diced

  • 8–10 scallions, for tying the rolls

Ingredients for the Sauce
  • 2 tbsp Kitchi Sauce, or adjust according to your sodium goals

  • ½ cup water

  • Pepper, to taste

  • 1 tsp tapioca starch

  • 1 tbsp water, for dissolving the tapioca starch

Instructions


  1. Combine the minced pork, Kitchi Sauce, carrots, and shiitake mushrooms. Mix until evenly distributed, then set aside for 10–15 minutes.

  2. Bring a pot of water to a boil. Blanch the napa cabbage leaves until they begin to soften, then transfer them to cold water and drain. Briefly blanch the scallions until pliable enough for tying.

  3. Lay a cabbage leaf flat on a plate. Place some pork filling near the base, fold both sides inward, and roll it up firmly.

  4. Tie each cabbage roll with a blanched scallion to help it hold its shape.

  5. Arrange the rolls in a steamer and steam over medium heat for 15–20 minutes, or until the pork is fully cooked.

  6. Meanwhile, prepare the sauce by combining Kitchi Sauce, water, and pepper in a saucepan. Heat gently and stir well. Mix the tapioca starch with 1 tablespoon of water, then add the slurry and simmer briefly until the sauce thickens. Turn off the heat.

  7. Arrange the steamed cabbage rolls on a plate, pour over the warm Kitchi Sauce, and serve.
