
Pork and Shrimp Wonton Soup
Tender, springy pork-and-shrimp wontons served in a warm pork-bone broth. This recipe uses just one bottle of Kitchi Sauce to season both the filling and the soup—no multiple seasonings required. The mild, well-balanced flavor is easy for children to enjoy, and moms can adjust the amount of sauce to suit their family.
Ingredients
Ingredients for the Wontons
20–25 wonton wrappers
150 g minced pork
100 g chopped shrimp
2–3 tbsp Kitchi Sauce, or adjust to taste
Water, for moistening the edges of the wrappers
Ingredients for the Broth
250 g pork bones
1 liter water
3 coriander roots, lightly crushed
4 tbsp Kitchi Sauce, or adjust to taste
Bok choy or scallions, as desired
Fried garlic, for garnish
Instructions
Rinse the pork bones thoroughly. Blanch them in boiling water for 3–5 minutes, then remove and rinse again to help produce a clear broth.
Place the pork bones, water, and coriander roots in a pot. Bring to a boil, then reduce to low heat. Skim off any foam and simmer for 45–60 minutes.
While the broth simmers, combine the minced pork, chopped shrimp, and Kitchi Sauce. Knead until the mixture becomes sticky and well combined, then rest for 10–15 minutes.
Place a spoonful of filling in the center of each wonton wrapper. Moisten the edges with water, then fold or pleat and seal firmly.
Bring a separate pot of water to a boil. Cook the wontons until they float and the pork-and-shrimp filling is fully cooked. Remove and set aside.
Season the pork-bone broth using only Kitchi Sauce. Stir well and taste before adding more sauce, especially when serving children.
Blanch the bok choy in the broth until just tender. Arrange the wontons and vegetables in a bowl, then ladle the hot broth over them.
Garnish with scallions and fried garlic, then serve.
